Veggie Burger with Juice BBQ Sauce
The smell of barbecue is in the air— it’s officially summer! Trade in classic ketchup for a berry-infused BBQ sauce to add on these homemade veggie burgers.

Ingredients:
- 1 can of chickpeas, drained and rinsed
- 1 cup of cooked brown rice
- ½ teaspoon of salt
- ¼ cup of toasted sunflower seeds
- ½ bell pepper, small dice
- 1 carrot, grated
- 1 small shallot, minced
- 2 garlic cloves, minced
- Prepared barbecue sauce
- ½ cup of panko breadcrumbs
Instructions:
- Preheat the oven to 350° and line a baking sheet with parchment paper.
- In a food processor, pulse the chickpeas, brown rice, and salt until combined.
- Add the chickpea and brown rice mixture to a large bowl. Mix in the sunflower seeds, bell pepper, carrot, shallot, garlic, and half of the barbecue sauce until combined. Stir in the panko breadcrumbs.
- Form 6 patties and place on the prepared baking sheet. Bake for 20-25 minutes or until firm.
- Place on a bun and top with the remaining barbecue sauce and toppings of choice.
